Airfryer Char Siu

Hi! I'm Joanna, or Jo. Cooking is an avenue for me to celebrate culture, heritage, and the stories behind each recipe. I focus on nostalgic recipes that are easy to recreate and enjoy.
Instructions
Chop garlic (1 Tbsp) and ginger (½ Tbsp) roughly. Set aside.
Mix garlic, ginger, soy sauce (2 Tbsp), dark soy sauce (1 Tbsp), honey (1 ½ Tbsp), oyster sauce (1 Tbsp), brown sugar (2 Tbsp), five spice powder (1 tsp), shaoxing wine (1 Tbsp), white pepper, and red fermented tofu (1 cube) (or food coloring) together in a medium/large bowl.
Cut pork (1 ½–1 ¾ lb) into 1.5 in wide, long strips. Poke holes into all sides of the pork well with a fork.
Mix pork with the marinade evenly. Then cover the top of the pork with a paper towel to ensure the top is covered with marinade as well and marinate in the fridge for at least 6 hours or best overnight.
Air fry at 400°F for ~13-15 minutes. Flip every 4-5 minutes. While the pork is airfrying, reduce leftover marinade in a small pan over medium/high heat until it’s a thicker sauce. On the first flip, baste the pork with more marinade, and for the last two flips, baste with honey.
Let sit for 10 minutes before chopping into slices.
Serve with fresh rice, some leafy greens, an egg, and drizzle w/ the reduced marinade and enjoy!
